Young garlic pulled before the bulb forms, like a slim leek with flat leaves and a mild garlic taste. Used in twice-cooked pork and with cured meat. Around Beijing the name means 蒜薹, the flower stalk.
Green garlic stir-fried with cured pork really goes well with rice.

usage
蒜苗 means different things in different places. In Sichuan dishes such as 回锅肉 it is the leafy young garlic plant, also called 青蒜. Elsewhere, especially in the north, it can mean the flowering stalk, 蒜薹 (also written 蒜苔), sold as long round sticks. 蒜黄 is the young plant grown in the dark, pale yellow.
