A young chicken, blanched, glazed with maltose and vinegar and dried, then fried by ladling hot oil over it until the skin is thin and crackling. Chopped on the bone and served with spiced salt; the meat stays juicy. A Cantonese dish.
Crispy fried chicken has to be eaten hot to stay crisp.
Tips
usage
Despite 炸 (deep-fry) in the name, classic Cantonese 炸子鸡 is mostly basted with boiling oil rather than submerged, the chicken is poached, coated in a maltose glaze, then hot oil is ladled over it until the skin lacquers into a glassy crisp.
