Tips

culture
Regional 凉面 styles diverge sharply: 四川凉面 swims in chili oil and 麻 (Sichuan peppercorn), 陕西凉皮 uses wide rice-flour sheets, 朝鲜冷面 (Korean naengmyeon) sits in icy beef broth, Taiwan's 凉面 leans on sesame paste. Same name, very different bowls.
