Meanings

  1. 1 yuxiang eggplant
  2. 2 eggplant in fish-fragrance sauce

About the dish

川菜 Sichuan · 热菜 Hot dish

Eggplant strips cooked soft in a sweet, sour and garlicky sauce of pickled chili, often with a little minced pork. The eggplant is usually fried first, so the dish is oily. 鱼香 names the sauce; there is no fish.

Yuxiang eggplant is my favorite Sichuan dish.

Tips

culture
Classic Sichuan dish. Despite the name (鱼香 'fish-fragrance'), it contains no fish - the sauce mimics a seasoning profile once used for fish, built on pickled chili, garlic, ginger, vinegar, and sugar.
