A thick stem under a crown of long leaves; peeled, the flesh is jade green, crisp and mild. Sliced or cut into strips for stir-fries, blanched for cold dishes, or added to soups.
Literally 'lettuce-bamboo-shoot' - a lettuce variety grown for its thick, crisp stem rather than the leaves. The peeled green stalk is sliced and stir-fried or pickled. Western markets sometimes call it celtuce.
