Thin slices of beef poached in a spicy broth and served in a big bowl over bean sprouts, celtuce, cabbage or other greens, under a layer of chili oil, dried chilies and Sichuan pepper. Very hot and numbing despite the name 水煮 (boiled).
Classic Sichuan dish despite the mild name: 'water-boiled' refers to the original Zigong salt-worker technique of poaching beef, but the finished dish is drenched in chili oil, Sichuan peppercorns, and dried chilies.
