Thin, translucent sheets of mung bean or sweet potato starch, sold fresh or dried; dried ones are soaked before use. Cut into strips, they are mostly dressed as a cold dish, and are also braised or used in hotpot.
Pork stewed with starch noodles and sheets is a favorite of northeasterners.
Tips
usage
粉皮 is wider and flat, sold dried in sheets (rehydrated before cooking) or fresh as translucent ribbons. Compare 粉条 (thin starch noodles) and 粉丝 (fine starch vermicelli) - same family, different shapes.
