Tips

usage
Umbrella name for any braised eggplant - regional variants include 鱼香烧茄子 (Sichuan, garlic-vinegar-chili), 地三鲜 (Dongbei, with potato and green pepper), and 红烧茄子 (northern, soy-sauce braise). All start with deep-frying the eggplant to soften it.
