Meat smoked to flavour and keep it, usually pork. In the Northeast it is pork simmered with spices and then smoked, sliced and rolled in flatbread with scallion and sauce; the word can also mean bacon.
熏肉 in China refers to traditional Chinese smoked meats, especially popular in Hunan, Sichuan, and Guizhou during the Lunar New Year. It's different from Western bacon (培根), which is a separate product.
