Light, hollow golden balls of fried wheat gluten, best known from Wuxi. They soak up broth and sauce, so cooks stuff them with minced pork and simmer them, or cook them with pork and vegetables.
Wuxi (无锡) is the canonical origin - hollow golden balls of deep-fried wheat gluten that soak up braising liquid. Essential in Jiangnan red-braised dishes, hotpot, and the stuffed version 肉酿面筋.
