Thick slices of fatty pork belly with the skin on, steamed in a bowl over preserved mustard greens or taro, then turned out onto the plate skin side up. Very soft, rich and slightly sweet.
The name 扣 means 'to invert' - slabs of pork belly are arranged face-down in a bowl over a bed like 梅菜 (preserved mustard greens) or 芋头 (taro), steamed for hours, then flipped onto a plate, so the glossy skin ends up on top. A banquet classic across Guangdong, Hunan, and Jiangxi.
