A sweet, smooth pudding of milk and egg white, steamed until set, with a thin wrinkled skin on top. Served warm or chilled, plain or with red beans. A Cantonese dessert.
Double skin milk with some red beans sprinkled on top is extra delicious.

A classic dessert from 顺德 (Shunde), Guangdong. The name comes from the two layers of skin that form during the double-steaming process: one when the hot milk cools, then a second when egg-white-enriched milk is re-steamed. Served hot or cold, often topped with red beans, lotus seeds, or fruit. Shunde's Renxin Restaurant (仁信) is the most famous original brand.
