Long, snake-like fish with oily flesh. Grilled with a sweet soy glaze and served on rice in the Japanese way, braised, or cooked in soup. Not the same as the swamp eel, 黄鳝.
Grilled eel (鳗鱼饭, unaju) is a prized dish in Japanese cuisine and has become popular in Chinese restaurants too. Freshwater eel (河鳗) and sea eel (海鳗) are both consumed.
