Best known in Hebei, where it is braised with spices, then sliced and eaten cold or chopped into hot flatbread. It costs more than most meats, and cheaper horse meat is sometimes passed off as donkey.
A Hebei specialty. The saying 天上龙肉,地下驴肉 ('dragon meat in heaven, donkey meat on earth') ranks it as the finest terrestrial meat. The classic dish is 驴肉火烧 - braised donkey stuffed into a crisp flatbread, found on every street corner in Baoding (保定) and Hejian (河间).
