The second of a cow's stomachs, its lining a raised pattern of small six-sided cells like a honeycomb. Firm and chewy, it is braised in spiced liquid and sliced, dressed cold or stir-fried.
Honeycomb tripe should be blanched first to get rid of the gamy smell, then braised slowly until tender.

肚 is read dǔ when it means tripe as food and dù when it means belly. The name, 'money tripe', comes from the honeycomb pattern, said to look like rows of old coins. Hot pot menus list it beside 毛肚, with its shaggy lining, and 牛百叶, with its thin leaf-like folds.
