About the ingredient

肉类 Meat

Bone-in rib pieces of lamb or goat, with layers of fat between the meat. They are grilled with cumin and chili powder, or boiled plain and eaten by hand, as in the northwest and Inner Mongolia.

Tips

usage
排 in food context means a slab of ribs / chop with bone (compare 牛排 steak, 猪排 pork chop, 鸡排 chicken cutlet). Without bone you'd say 羊肉 or 羊柳.
