Flat sea fish with both eyes on its dark upper side and a pale underside, with lean, delicate white flesh. Steamed whole with ginger and scallion, or pan-fried or deep-fried.
The name 比目鱼 literally means 'side-by-side eye fish' - 比 (side by side), 目 (eye), 鱼 (fish). This perfectly describes the flatfish, whose eyes migrate to one side as it matures.
