About the ingredient

水产 Fish and seafood

A palm-sized freshwater crab with dense fur on its claws, eaten in autumn: females in the ninth lunar month, when their roe is ripe, and males in the tenth. It is steamed with ginger and dipped in vinegar with sugar and ginger.

Peak season is 九月圆脐，十月尖 - September for females (roe-full, round abdomen), October for males. Aged yellow wine (黄酒) is the classic pairing.
